After 28 Great Years serving the Longview, Texas area and during the Covid-19 pandemic, Dudley decided to downsize to his catering building serving his delicious food with curbside service.
Dudley moved to Longview,Texas in 1989 to be the sales manager for John Deere Insurance Company for the East Texas area.
Dudley quickly made new friends as East Texas people are very friendly. He always loved to cook and invite friends over. His new friends enjoyed his food.
Dudley decided that he would work during the week for John Deere and sell boiled crawfish on the weekends since no one else was boiling them at the time. He went back to Louisiana and picked up my crawfish boiling trailer and started boiling and selling crawfish at the end of my driveway north of the loop on Judson Road. People would ask “Can you make me some gumbo for next weekend?” The next thing he knew, people were knocking on my door ordering different cajun dishes. Donald Knight stopped and bought some boiled crawfish. He had a gas station just south of I-20 on Eastman Road. It was where the exit was coming out of Texas Eastman. He made Dudley an offer. He would sell gas, beer, and cigarettes and Dudley would sell boiled crawfish, meat pies, crawfish pies, and Jambalaya from my trailer. It worked great for both of them. Dudley had worked himself into a full time job. He decided to resign from John Deere and open a real restaurant. Dudley found the old ALPHIES FISH AND CHIPS building that had been vacant for a few years and leased it. He opened in 1992 and a year later bought the building. Every year since opening, they have been voted the best Cajun and seafood in East Texas by an annual readers poll in the Longview Newspaper.

Dudley’s will be opening back up next to his old restaurant location in his catering kitchen building with curbside pickup items with patio seating.
I have several catering trailers. One of which is a complete mobile kitchen that we can drive to any site and cook anything that is on our menu. I have also done menus other than cajun food. We are completely self contained with our own water tanks, hot water heater, holding tanks, generator, ovens, stove, fryers, sinks, and a fire suppression system.
Our catering takes on several forms:
1. We can cater at your location.
2. We can cater at several venues in the area that rent for parties.
3. You can save some money if you allow us to put a catering together and you pick it up.
We have catered for small gatherings of friends and family in people’s home, to family reunions, wedding receptions, rehearsal dinners, anniversaries, Christmas parties, and to oil and gas well sites.
When the ground and pad work was finished for the new Cowboy’s stadium, we catered a crawfish boil for the workers. A few weeks later, we were at the Civic Center in Shreveport cooking 750 steaks for a fund raiser.
There is no catering too small or too large.
